is that you have to walk back when you forget something. I like walking to work. When I walk at a good pace, I get there in seven minutes. I also enjoy going entire days without turning my car on. Today I was about fifty yards from the front door of school when I realized that I forgot to put my chicken tortilla soup ingredients in the crock pot. For a split second I thought about making soup another night, but then I remembered that I had promised Derek I would make the soup tonight. For those of you who don't know Derek, he is a kind man who will tell me he likes everything I cook (whether he really likes it or not). Chicken tortilla soup is something he has asked me to make, so I know he likes this. Six and a half minutes in to my walk to school, I turned around, picked up the pace and went home. By the time I opened the cans and dumped everything in, I didn't have enough time to walk to school again, so today was not one of the days I avoided turning the car on. (Even though first period always seems to be my "practice class," I like to get there a few minutes early.) Luckily the soup was good.
"Opening the Cans is the Hardest Part" Chicken Tortilla Soup
2 cans of black beans
2 cans of Rotel (tomatoes)
2 cans of chopped green chiles
3 chicken breasts
Put everything in the crock pot and cook on low for 10-12 hours. At the end of cooking, shread the chicken with a fork. Serve topped with cheese and/or tortilla chips.

I love making soup in the fall - and am always looking for a new one to try - sounds good!
This sounds like something even I can make. I think maybe I'll give it a try this weekend. Yummy smells from the crockpot on chilly fall days, that's good stuff.
I made this soup today and it was EXCELENTE!! I posted the recipe on my blog (crediting you, of course) so others can enjoy it, too.
